I think I know what is your problem. You talked about attacking him and he defended. I don’t know what is the timing and micro level but if you attack, you should not commit too much or too inefficient and it must be a timing attack rather than some casual attack and just lose units for nothing.
The key are Protoss timing attack will always be centred around sentries. You need to make Terran units as uncomfortable as possible. If you have colossi, you need to wall off his bio units so they cannot attack your units and your colossi will just gete free units. It is important not to 1A your zealots into ff or they will get free hits from terran bio balls and the whole purpose of FF will be negated.
If you go for zealots + templar timing, which is kinda of a new thing because it is very dangerous that you may lose all your templars and zealots if you don’t have enough zealots, you need to trap as many ranged units as possible and storm everything.
The best way in my opinion is still to stay defensive but try to stop Terran expanding too much too quickly and get a max army and 15~20 gates and then try to win the game in the long game. Attack only when you are sure you have the advantage and not to waste your army and lose everything; it means unless you are sure you land on good amount of the splash damage, don’t think about just kill the whole terran army in one go, be smart with your army.
